Saffron in Alsace, the crazy bet of a former sales assistant converted into a producer

You have to grope your way to harvest small purple flowers, which give rise to the most coveted spice in the world: saffron. Nathalie Lebran, a former sales assistant, converted four years ago to 100% organic production a few kilometers from Mulhouse (Haut-Rhin).

“We don’t think we can make spices in France. When I go to trade shows, there are people who tell me ‘Saffron in Alsace, anything'”confides Nathalie. If 90% of saffron production is found in Iran, the flower, although delicate, adapts easily to France. Nathalie is trying to revive this spice established in France until the 20th century. She sells her harvest in gastronomic establishments.
